Registered Dietitian, University Housing & Dining
Position Summary:
The role of the Dietitian is to plan, organize, supervises coordinate, and evaluates nutrition education and awareness activities for University Housing and Dining. This role meets with students to determine individual dietary/nutrition requirements. They will also assist in creating exciting menus featuring flavorful and high-quality nutritious foods, along with engaging students in live wellness events. The Dietitian will evaluate menus and food products for taste and trends along with chefs as well as create outreach program for dining nutrition while collaborating with other departments on campus.
Specific Job Duties & Tasks:
- Meet with students to determine individual dietary/nutritional needs, including medical restrictions, allergies, and eating disorders.
- Provide referral information and assistance as needed.
- Research specialty foods, beverages, and supplies to ensure compliance.
- Oversee appropriate level of specialty foods, beverages, and supplies associated with individual student dietary/nutritional requirements.
- Advise management on budgetary needs.
- Recommend purchase of informational needs including printed and visual media materials.
- Create and maintain a comprehensive nutrition education and awareness program.
- Develop nutrition educational materials for students, faculty, staff, and University guests.
- Recommend measure to improve production/service methods, equipment performance, scheduling, quality, and cost control, and suggest changes in working conditions and use of equipment to increase efficiency and safety.
- Test food items served for cross contact due to allergies.

Required Qualifications:
- Bachelor’s degree or related experience in Foods and Nutrition, Dietetics, Nutritional Science or a related field.
- Completion of approved dietetic internship program or equivalent combination of education and practicum experience.
- Typically 6 months – 1 year experience providing dietetic services.
- Registration by the Commission on Dietetic Registration within six (6) months following the start of employment.
- Demonstrates excellent written and verbal communication skills. Ability to effectively transmit, receive and accurately interpret ideas, information, and needs through appropriate communication methods and behaviors at a working proficiency level.
- Demonstrates a working proficiency in the ability to work with variety of individuals and groups while appreciating the unique contribution of individuals.
- Demonstrates a working proficiency in the ability to provide excellent customer and to meet or exceed customer service needs.
- Proficiency in the use of Microsoft Office computer software applications, (including, Excel, Word, Outlook).
- Familiarity with current issues in nutrition research and have experience performing nutrient analyses of quantity recipes.
- Ability to meet and maintain ServSafe certification.
- Working knowledge of web based food and nutrition systems.
Desirable Qualifications:
- College/University dining operation experience.
- Experience working with complex food allergies.
